Will this load cell work with an excitation voltage of 5V? Is it compatible with the Sparkfun load cell amplifier - HX711? If not can you please recommend a compatible amplifier and signal conditioning module?
Yes the LCR Series load We have reviewed the specifications the HX711 amplifier you indicated and it appears that it would function ok with our load cell.

Hi, Can you tell me what is the response time of this sensor? How quickly does the output voltage reflects the input force? Can it be use to monitor fluctuating forces in real time?
Typical response time is 1 to 2 milliseconds. All our load cells are piezo-resistive devices designed for static load measurement. If you are looking to measure a dynamic load you should be looking for a piezo-electric device. These types of sensors are designed to measure peak load forces as opposed to static loads. Their response is in the 1 microsecond range. We do not offer any piezo-electric load cells.
