Can I get 8 thermometer lines that are IR instead of probes to plug into this unit? Also, how long can the wires be for the plugs?

We offered Self Powered IR Thermocouple sensors for example the OS36-K series which provides a type K output . The standard lead wire length is 36 inches .
They can be offered in various temperature ranges and field of views. A mini Type K connector GMP-K-M can be added to the stripped lead wires .
Please note the IR sensor will have to be evaluated with the meter for suitability due to its high impedance .
Details of your application such as Temperature Range both min and max, size and type material of the object that you are measuring, distance of the sensor to object , ambient temperature of sensor etc. will help us determine an appropriate IR sensor for your application
